Serves: 40 small cupcakes

Bright, light and fluffy, these sweet and scrumptious cupcake treats are super easy to whip up for any occasion.

Ingredients

For the cupcakes

60ml cooking oil

5ml distilled white vinegar

330ml water

540g Snowflake Creations Rainbow Cake Mix

For the vegan white icing

150g plant butter

300g white icing mix

30ml almond milk / coconut milk / soya milk

Method

  • First bake the cupcakes…
  • Preheat the oven to 180°C
  • Beat oil, vinegar and water with a whisk, then add cake mix and blend mix by hand until well combined
  • Divide batter into 4 separate mixing bowls
  • Add a different colour mix to each batter and blend each until blended. Rinse the whisk well between colours
  • Place paper cups into muffin baking tray and add a spoonful of each of the 4 coloured batters until halfway full (spray papercups with baking spray)
  • Bake for about 12 minutes
  • Cool on a wire rack before icing
  • … then make the icing
  • Add icing mix to plant butter and mix on slow speed until it resembles breadcrumbs
  • Add the almond milk (or coconut / soya milk) and mix for about 2 minutes on high speed until creamy
  • Decorate the cooled cupcakes with icing
