Our take on the classic brownie - they’re decadently rich, fudgy and deliciously moreish.

Ingredients

For the brownies

155ml cooking oil

185ml almond milk / coconut milk / soya milk

500g Snowflake Creations Red Velvet Cupcake Mix

100g icing mix

For the vegan vanilla flavoured icing

200g icing mix (remaining ⅔ of icing mix sachet)

30ml boiling water

Method

  • First bake the brownies…
  • Preheat the oven to 160°C
  • Mix oil, almond milk (or coconut / soya milk), cupcake mix and 100g icing mix with a spoon until smooth
  • Spoon mixture into a greased 20 x 20 cm square tin lined with baking / wax paper
  • Bake for about 35 minutes
  • Turn out onto a cooling rack and remove greaseproof paper immediately
  • Cool completely before topping with the icing
  • … then make the vegan icing
  • Place icing mix into a small glass bowl
  • Add hot water to icing mix and mix until smooth
  • Pour over cooled brownies and allow to set
