Chunky chocolate treats packed with crunchy biscuit pieces, marshmallows and cherries for a decadent anytime treat.

Ingredients

Step 1: Chocolate Coconut Cookies

200g plant butter, softened

30ml almond milk / coconut milk / soya milk

500g Snowflake Creations Chocolate Brownie Mix

125ml desiccated coconut

Step 2: Rocky Road

250g chocolate coconut cookies (recipe above)

80g plant butter

40ml golden syrup

320g vegan dark chocolate, roughly broken

1  fondant icing mix sachet

1  baking chocolate sachet

75g vegan mini marshmallows / jelly beans

75g soft vegan jelly sweets

80g chopped nuts of your choice (optional)

Method

  • For the Chocolate Coconut Cookies...
  • Preheat the oven to 180C
  • Line a baking tray with wax / baking paper
  • Mix softened plant butter with almond milk (or coconut milk / soya milk), then add brownie mix and desiccated coconut and combine fully
  • Shape into golf ball-sized balls by hand, then flatten on a baking tray with a fork
  • Bake for about 8-10 minutes and cool completely
  • For the Rocky Road...
  • Break chocolate coconut cookies into pieces
  • Melt plant butter and golden syrup in a pan, then add fondant icing mix and stir well
  • Add all chocolate and melt on low heat
  • Add broken cookie pieces, sweets and nuts to the melted mixture
  • Press into a 20 x 20 cm lined and greased baking tin
  • Refrigerate until set, then cut into squares
