Crustless milk tart

Preparation Time: 20 Minutes

Cook Time: 1 Hour

Serves: Makes 2 tarts

A South African favourite.

Ingredients

250ml (210 g) castor sugar

30ml butter or margarine, melted

5ml vanilla essence

250ml (140 g) Snowflake cake flour

5ml Snowflake baking powder

1ml salt

4  extra-large eggs, separated

1l Milk

10ml Ground cinnamon for sprinkling

Method

  • Beat egg yolks, sugar and melted butter together until creamy. Add essence.
  • Sift flour, baking powder and salt together. Add, alternately with milk, to egg mixture.
  • Beat egg whites until stiff peak stage. Gently fold egg whites into creamed mixture, using a metal spoon.
  • Pour mixture into 2 greased 23 cm ovenproof tart dishes. Sprinkle with cinnamon and bake in a preheated oven at 160 °C for about 1 hour. Remove from oven and leave to set.



Tried and Tested

I have followed the instructions to the T and after 1 hour and then letting it set the mixture was still runny. I have hower Placed it back into the oven for a further 30 mins at 180° and it came out perfect.
