Delicate sponge fingers

Tasty treats, have never been so easy to bake!

Ingredients

125ml (105 g) castor sugar

250ml (140 g) Snowflake cake flour

1ml salt

15ml castor sugar for sprinkling

2ml extra-large eggs, separated

Method

  • Beat egg yolks and sugar together until light and creamy.
  • Sift flour and salt together and gently fold into egg yolk mixture. Beat egg whites until soft peak stage and gently fold into egg yolk mixture, using a metal spoon. Mix lightly until smooth and lump free.
  • Spoon mixture into a piping bag fitted with a medium, round nozzle, and pipe finger shapes of about 8 cm long, onto greased baking trays or éclair pans. Sprinkle sugar over.
  • Bake in a preheated oven at 180 °C for about 8 minutes, or until done. Turn out onto a wire rack to cool.
