Double chocolate muffins

 



Preparation Time: Approximately 15 minutes

Cook Time: 20 minutes

Serves: Makes 12

Moist and bursting with chocolate flavour – best devoured hot from the oven.

Ingredients

280g Snowflake Cake Wheat Flour

15ml Snowflake Baking Powder

2ml salt

30g cocoa powder

100g sugar

75g chocolate chips

2  eggs

160ml milk

160ml cooking oil

Method

  • Sift flour, baking powder, salt and cocoa powder together. Add sugar and chocolate chips.
  • Whisk eggs, milk and oil together. Add to dry ingredients and mix lightly with a spoon until just combined. Do not overmix, mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each to three-quarters full.
  • Bake in a preheated oven at 180°C for about 20 mins, or until golden brown. Turn out onto a wire rack to cool.
