Eggless chocolate cake

 



Preparation Time: 20 minutes

Cook Time: 50 - 60 minutes

Serves: Makes 1 large cake

A variation on a traditional chocolate cake.

Ingredients

125g butter or margarine, melted

15ml white vinegar

500ml water

10ml vanilla essence

750ml (420 g) Snowflake self-raising flour

5ml bicarbonate of soda

5ml salt

80ml (35 g) cocoa powder

375ml (300 g) sugar

Chocolate icing

60g butter or margarine

30ml milk

2ml vanilla essence

375ml (200 g) icing sugar

20ml cocoa powder

Method

  • Whisk melted butter, vinegar, water and essence together.
  • Sift flour, bicarbonate of soda, salt and cocoa powder together. Add sugar.
  • Add dry ingredients to liquids and whisk lightly until smooth.
  • Spoon mixture into a lined and greased 21 cm square or 23 cm loose-bottom springform cake pan. Bake in a preheated oven at 180 °C for 50 - 60 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool.
  • Icing: Heat butter and milk together in a small, heavy-based saucepan. Do not boil; stir until butter is melted. Remove from heat and add essence. Sift icing sugar and cocoa powder together. Add melted butter mixture to icing sugar mixture. Mix until smooth and spread over cake.
