Eggless hot milk sponge cake

 



Preparation Time: 15 Minutes

Cook Time: 25 minutes

Serves: Makes 1 two-layer cake

A super treat to enjoy with a hot cup of tea.

Ingredients

500ml (280 g) Snowflake cake flour

25ml baking powder

2ml salt

300ml (250 g) castor sugar

80ml apple puree

200ml milk

125g butter or margarine

5ml vanilla essence

1  quantity butter icing

Method

  • Sift flour, baking powder and salt together. Add sugar and apple puree.
  • Heat milk and butter in a small, heavy-based saucepan. Do not boil; stir until butter is melted. Remove from heat and add essence.
  • Add milk mixture to flour mixture and beat until smooth. Spoon mixture into two lined and greased 20 cm round cake pans.
  • Bake in a preheated oven at 180 °C for 20 - 25 minutes. Leave in pans for a few minutes before turning out onto a wire rack to cool completely.
  • Sandwich cake layers with half the icing. Use remaining icing to ice top of cake.
