Favourite blueberry muffins

 



Preparation Time: 10 Minutes

Cook Time: 15 - 20 minutes

Serves: Makes 12 standard

A delicious blueberry muffin - perfect as a breakfast addition or a snack at tea time.

Ingredients

500ml (280 g) Snowflake cake flour

15ml baking powder

3ml salt

200ml (170 g) castor sugar

125ml milk

100ml cooking oil

425g can blueberries, well drained

2ml extra-large eggs

Method

  • Sift flour, baking powder and salt together. Add sugar.
  • Whisk eggs, milk and oil together. Add to dry ingredients and mix lightly. Add blueberries and continue mixing until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 200 °C for 15 - 20 minutes, until done and golden brown. Turn out onto a wire rack to cool. Serve warm with butter.
