Fruity bread and butter pudding

 



Preparation Time: 20 Minutes

Cook Time: 40 - 50 Minutes

Serves: Serves 4 - 6

A classic recipe to be shared by the family.

Ingredients

250g Snowflake Easymix flapjack (375 ml)

30ml cooking oil

250ml milk or water

10  grated lemon rind

10  slices white bread, panettone or croissants

50g butter or margarine, softened

125g dried apricots, coarsely chopped

2  extra-large eggs

Method

  • Place premix into a mixing bowl. Lightly beat eggs, oil and milk together. Add rind. Add to premix and mix with a whisk until batter is smooth, thick and lump free.
  • Remove crusts from bread and butter slices. Cut into quarters and layer slices with butter sides upwards in a large, greased ovenproof dish. Sprinkle apricots on top.
  • Pour batter over bread slices and leave to soak for about 5 minutes. Bake in a preheated oven at 180 °C for 40 - 50 minutes or until golden brown. Serve with custard or any sweet sauce of choice.
