Fruity whole wheat loaf

 



Preparation Time: 20-25 Minutes

Cook Time: 1 Hour

Serves: Makes 1 loaf

Delicious served around the breakfast table.

Ingredients

250ml (140 g) Snowflake white bread or cake flour

375ml (210 g) Snowflake nutty wheat

5ml baking powder

7ml bicarbonate of soda

5ml salt

60ml (50 g) light or soft brown sugar

250ml (80 g) rolled oats

200ml (120 g) dried fruit cake mix

500ml buttermilk or sour cream

125ml milk

Method

  • Sift bread flour, nutty wheat, baking powder, bicarbonate of soda and salt together. Add bran left behind in sieve.
  • Add sugar, oats and fruit cake mix.
  • Whisk buttermilk and milk together. Add to dry ingredients and mix well.
  • Spoon mixture into a greased 22.5 cm loaf pan.
  • Bake in a preheated oven at 180 °C for about 50 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool.
