Fruity eggless muffins

 



Preparation Time: 10 Minutes

Cook Time: 20 - 25 Minutes

Serves: Makes 10 standard

A recipe for easy, fluffy and light muffins without eggs

Ingredients

500ml (280 g) Snowflake cake flour

15ml baking powder

2ml salt

125ml (105 g) castor sugar

100g butter or margarine, melted

15ml white vinegar

30ml water

150ml milk

150g fresh fruit, such as bananas, coarsely chopped

Cinnamon sugar for sprinkling

Method

  • Sift flour, baking powder and salt together. Add sugar.
  • Combine melted butter, vinegar and water. Add, alternately with milk, to dry ingredients. Mix lightly and fold in fruit until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 180 °C for 20 - 25 minutes until done and golden brown. Turn out onto wire rack to cool. Serve warm with butter.
