Golden ginger cake

 



Preparation Time: 45 Minutes

Cook Time: 30 Minutes

Serves: Makes 1 large cake

An addictive recipe that will have you wanting more!

Ingredients

375ml (210 g) Snowflake cake flour

3ml baking powder

5ml bicarbonate of soda

1ml salt

8ml ground ginger

2ml ground cinnamon

3ml ground mixed spice

125ml (100 g) soft brown sugar

125ml milk

60g butter or margarine

125ml golden syrup

60g preserved ginger, coarsely chopped (optional)

1  extra-large egg

Caramel icing

60g butter or margarine

60ml (50 g) soft brown sugar

375ml (200 g) icing sugar, sifted

5ml vanilla or caramel essence

20ml milk

Method

  • Sift flour, baking powder, bicarbonate of soda, salt and spices together. Add sugar.
  • Whisk egg and milk together and add to dry ingredients.
  • Melt butter and syrup together in a small, heavy-based saucepan. Add to cake mixture and beat until smooth. Add ginger.
  • Spoon mixture into a lined, greased 21 cm square or 23 cm loose-bottom springform cake pan. Bake in a preheated oven at 160 °C for about 45 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool.
  • Icing: Melt butter and sugar together slowly. Add icing sugar, essence ad milk and mix until smooth. Ice cake.
