Gooseberry and orange filling

 



Preparation Time: 3 Minutes

Cook Time: 5 Minutes

Serves: Fills 1 Flan

A sweet and delicious filling for 1 flan.

Ingredients

410g can gooseberries in syrup, reserve syrup

60ml golden syrup

30ml sugar

80ml fresh orange juice

45ml custard powder

5ml grated orange rind

125ml fresh cream, whipped, for decorating

Method

  • Drain gooseberries and pour 125 ml reserved syrup into a small, heavy-based saucepan. Add golden syrup and sugar and gently start to heat.
  • Mix orange juice and custard powder together to make a smooth paste. Stir into syrup mixture. Cook until mixture is smooth and thickened. Remove from heat and add gooseberries and orange rind. Mix lightly.
  • Leave mixture to cool slightly. Spoon into flan and refrigerate until set. Decorate with whipped cream.
