Granadilla icing

Serves: Covers 1 Cake

A super topping for cakes and cookies.

Ingredients

30ml butter or margarine, softened

625ml (325 g) icing sugar, sifted

115g can granadilla pulp

Citrus icing

60g butter or margarine, softened

500ml (250 g) icing sugar, sifted

5ml grated lemon or orange rind

45ml fresh lemon or orange juice

Method

  • Cream butter and icing sugar together. Add rind and enough lemon or orange juice to mix to a smooth consistency.
  • Cream butter and icing sugar together. Add granadilla pulp and mix to a smooth, spreadable consistency.
  • Sandwich cake layers with half the icing. Use remaining icing to ice top of cake.
