Haddock pie

 



Preparation Time: 15 Minutes

Cook Time: 30 minutes

Serves: Serves 4 - 6

The ultimate comfort food!

Ingredients

30ml butter or margarine

30ml Snowflake cake flour

250ml milk

250g frozen haddock fillets, cooked and flaked

250ml (100 g) grated cheddar cheese

15ml chopped gherkins

1  medium onion, finely shopped

15ml chopped fresh parsley or 5 ml dried

15ml chopped fresh herbs or 5 ml dried

5ml mustard powder

Salt and freshly ground black pepper to taste

1  quantity (about 380 g) cream cheese pastry

3  extra-large eggs, lightly beaten

Method

  • Melt butter in a medium, heavy-based saucepan. Add flour and stir over low heat for 1 minute. Add milk and cook over medium heat, whisking constantly, until sauce thickens. Remove from heat.
  • Add haddock, cheese, gherkins, onion, herbs, mustard powder, seasoning and eggs. Mix well. Leave to cool slightly.
  • Roll out pastry on a lightly floured surface, to a thickness of about 3 mm. Line a greased 23 cm ovenproof pie dish. Spoon filling onto pastry base.
  • Bake in a preheated oven at 180 °C for about 30 minutes, or until set.
