Hedgehog cake

Preparation Time: 1 Hour 30 Minutes

Cook Time: 55 - 60 Minutes

Serves: Makes 1 large cake

A cute and fun cake that your kids will absolutely love making with you!

Ingredients

200ml cooking oil

375ml (300 g) sugar

45ml smooth apricot jam

635ml (350 g) Snowflake self-raising flour

7ml bicarbonate of soda

2ml salt

60ml (25 g) cocoa powder

375ml milk

4  extra-large eggs

Icing and topping

100ml butter or margarine, softened

500ml (250 g) icing sugar, sifted

60ml (25 g) cocoa powder

30ml hot water

5ml vanilla essence

30ml milk

Decoration

10ml cocoa powder

125g ¼ quantity marzipan

3  jelly beans or any other sweets or extra marzipan

15  flake chocolates

Method

  • Whisk oil and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy. Add jam.
  • Sift flour, bicarbonate of soda, salt and cocoa powder together. Add, alternately with milk, to creamed mixture. Mix well.
  • Spoon mixture into a deep round greased ovenproof glass bowl (3.5 litre size) and bake in a preheated oven at 180 °C for 55 - 60 minutes. Leave in bowl for a few minutes before turning out onto a wire rack to cool completely.
  • Icing and topping: Cream butter and icing sugar together. Mix cocoa powder with hot water until smooth and add to icing. Add essence and enough milk to mix to a smooth, spreadable consistency.
  • To assemble: Cut cake horizontally into two layers and sandwich together with icing. Cut off 4 - 5 cm of cake on two opposite sides. Place the two cut-off pieces on top of cake to make the top more peaked. Cover cake with remaining icing.
  • Decoration: Add cocoa powder to marzipan and knead until well combined. Shape into a little face and stick onto cake. Place sweets on face for eyes and one for the nose. Cut each flake into three and press into icing while still soft.
