Serves: Makes about 400 g

This crisp pastry is thicker than most, making it ideal to use for the base of pies and small pastries, such as jam tarts.

Ingredients

500ml (280 g) Snowflake self-raising flour

2ml salt

100g butter

100ml boiling water

Method

  • Sift flour and salt together. Combine butter and boiling water and stir until butter has melted. Add mixture to dry ingredients and mix to a soft pastry.
  • Cover with plastic wrap and refrigerate for at least 1 hour.
  • Roll out pastry on a lightly floured surface to a thickness of about 3 mm.
  • Use as instructed in chosen recipe and bake in a preheated oven at 200 °C for 20 minutes or until golden brown.
