Jam doughnuts

 



Preparation Time: 40 minutes

Cook Time: 5 Minutes

Serves: Makes about 12

A tantalizing twist on traditional doughnuts.

Ingredients

500ml (280 g) Snowflake cake flour

5ml salt

45ml butter or margarine

15ml castor sugar

5g (½ packet) instant dry yeast (6 ml)

125ml About lukewarm milk

80ml About (110 g) smooth apricot jam

1  extra-large egg, beaten

Cooking oil for deep-frying

200ml About (170 g) castor sugar for coating

Method

  • Sift flour and salt together. Rub in butter with fingertips until mixture resembles fine breadcrumbs. Add sugar and yeast.
  • Add beaten egg and enough lukewarm milk to mix to a soft dough. Knead for about 10 minutes, until dough is smooth and elastic. Place dough in a lightly oiled, large bowl, cover, and allow to rise for about 30 minutes.
  • Knock down on a gently floured surface and knead until smooth. Divide into 12 pieces. Roll into balls and make a hole in the middle of each. Fill centre with about 5 ml jam and pinch to close. Place pinched side down. Cover with oiled plastic wrap and allow to rise for 10 minutes.
  • Heat oil in a small, heavy-based saucepan. Deep-fry doughnuts in hot oil until golden brown. Remove from oil with a slotted spoon and drain on paper towel. Roll in extra sugar.
