Jam crumble tart

 



Preparation Time: 20 minutes

Cook Time: 20 minutes

Serves: Makes 1 tart

An easy way to imitate Granny's best bakes.

Ingredients

125g butter or margarine, softened

125ml (100 g) sugar

5ml vanilla essence

375ml (210 g) Snowflake cake flour

5ml baking powder

2ml salt

200ml (260 g) smooth apricot jam, slightly heated

1  extra-large egg

Method

  • Cream butter and sugar together. Add egg and beat well until light and creamy. Add essence.
  • Sift flour, baking powder and salt together. Add dry ingredients to creamed mixture and mix well to a soft pastry.
  • Press about two-thirds of pastry into a greased 23 cm ovenproof tart dish. Refrigerate for about 10 minutes. Refrigerate remaining pastry as well.
  • Prick base and bake blind in a preheated oven at 190 °C for 10 minutes. Remove beans and greaseproof paper. Reduce oven temperature to 180 °C
  • Spread jam over base. Coarsely grate remaining pastry over jam. Bake for about 20 minute until golden brown and crisp. Leave to cool, before cutting and serving.
