Preparation Time: 20 minutes, plus 1 hour for cooling the syrup

Cook Time: 30 minutes

Ingredients

310ml Plain Yoghurt (for best results, do not use double cream)

1  pot Cooking Oil for frying

For the Syrup

1500ml Sugar

1250ml Water

15ml Cream of Tartar

15ml Lemon Juice

1  pinch Ginger Powder

Method

  • Add all the syrup ingredients together in a pot
  • Heat until all the sugar is dissolved and boil for 5 minutes
  • Cool in freezer for 1 hour
  • Mix Sweet Mix and yoghurt together in a mixing bowl until a firm dough ball is formed
  • Rest dough in fridge for 10 minutes
  • Roll out on a floured surface into 1-2 mm thick rectangular shape
  • Cut into 7x3 cm rectangular shapes, cut 3 legs leaving the top uncut and plait koeksisters
  • Heat enough oil in a pot for deep frying, and fry koeksisters until cooked and golden brown
  • Dip quickly into ice cold syrup until syrup is absorbed
