Serves: Makes about 15

Lacy Florentines

Ingredients

80g butter or margarine

60ml (50 g) sugar

15ml golden syrup or honey

15ml fresh lemon juice

50g red or green glace cherries, coarsely chopped

50g mixed citrus peel

30ml flaked almonds

125ml (70 g) Snowflake cake flour

250g dark chocolate, melted

Method

  • Combine butter, sugar, syrup and lemon juice in a small, heavy-based saucepan and heat until butter and sugar have melted. Remove from heat.
  • Mix cherries, citrus peel and almonds together. Sift flour and mix through fruit. Add to melted butter mixture.
  • Roll mixture into heaped teaspoon-size balls and place onto greased baking trays, leaving enough space for spreading. Flatten slightly using a spoon.
  • Bake in a preheated oven at 180 °C for 10 - 12 minutes. Turn onto wire racks to cool.
  • Spread melted chocolate onto smooth side of biscuit. When chocolate has nearly set, make wavy patterns in it, using a fork. Store in an airtight container.
