Madeira coconut loaf

 



Preparation Time: 15 - 20 minutes

Cook Time: 30 Minutes

Serves: Makes 1 loaf

Who doesn't love a Madeira loaf? Especially with coconut in it.

Ingredients

125g butter or margarine, softened

100ml (80 g) castor sugar

5ml vanilla essence

250ml (140 g) Snowflake cake flour

10ml baking powder

1ml salt

100ml milk

3  extra-large egg yolks

Topping

3  extra-large whites

100ml (85 g) castor sugar

250ml (80 g) desiccated coconut

Method

  • Cream butter and sugar together. Add egg yolks, one at a time, beating after each addition until light and creamy. Add essence.
  • Sift flour, baking powder and salt together. Add, alternately with milk, to egg mixture. Mix well.
  • Spoon mixture into a lined and greased 22.5 cm loaf pan.
  • Topping: Beat egg whites until foamy. Gradually add sugar and beat until stiff peak stage. Gently fold in coconut, using a metal spoon.
  • Spoon topping over cake mixture. Bake in a preheated oven at 180 °C for about 30 minutes. Reduce oven temperature to 160 °C and continue baking for 15 - 20 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool completely.
