Marzipan (almond paste)

Serves: Makes about 430 g

Marzipan is ideal to use as a layer under royal icing or sugar paste icing for fruit, wedding r Christmas cakes. Brush a thin layer of apricot jam onto the bake before covering with the rolled out (on a surface dusted with icing sugar) marzipan. It is also available ready-made.

Ingredients

300ml (125 g) ground almonds

125ml (105 g) castor sugar

250ml (130 g) icing sugar

5ml fresh lemon juice

15ml sherry or water

3ml almond or vanilla essence

1  extra-large egg yolk or about 30 ml water

Method

  • Combine almonds and castor sugar. Sift icing sugar and add, mixing well.
  • In another bowl, mix egg yolk, lemon juice, sherry and essence. Add to icing and mix to a ball. Add water if required.
  • Knead well on a surface dusted with sifted icing sugar, until smooth and soft.
