Muesli citrus rusks

 



Preparation Time: 20 Minutes

Cook Time: 45 minutes

Serves: Makes about 70

The combination of muesli and citrus will be a show-stopper at any event.

Ingredients

ml (1 kg) Snowflake self-raising flour

5ml baking powder

8ml bicarbonate of soda

10ml salt

500ml (100 g) All-bran flakes, slightly crushed

500ml (250 g) muesli

100g mixed citrus peel

15ml grated lemon rind

375ml (300 g) light brown sugar

750ml buttermilk

500g margarine, melted (preferably not butter)

2  extra-large eggs

Method

  • Sift flour, baking powder, bicarbonate of soda and salt together. Add the remaining dry ingredients.
  • Whisk eggs and buttermilk together and add, alternately with melted margarine, to dry ingredients. Mix well to a soft dough.
  • Spoon into a greased 24 x 34 cm oven pan. Bake in a preheated oven at 180 °C for about 45 minutes. Leave to cool in pan and turn out onto a wire rack.
  • Cut into about 2 cm-thick slices, then cut into smaller pieces. Dry out in a cool oven at about 70 °C for 6 - 8 hours, or overnight. Store in an airtight container.
