Muesli, yoghurt & honey muffins

Cook Time: 20 minutes

Serves: Makes 12 standard

The perfect combination of ingredients to create a recipe that will quickly become one of your favourites.

Ingredients

125g butter or margarine, softened

125ml (100 g) sugar

5ml vanilla essence

500ml (280 g) Snowflake cake flour

10ml baking powder

5ml bicarbonate of soda

100g muesli

175g tub plain yoghurt

60ml milk

2  extra-large eggs

Topping

125ml honey, heated

Extra muesli for sprinkling

Method

  • Cream butter and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy. Add essence.
  • Sift flour, baking powder and bicarbonate of soda together. Add muesli.
  • Add dry ingredients, alternately with yoghurt and milk, t egg mixture. Mix lightly until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 180 °C for about 20 minutes until done and golden brown.
  • Topping: Prick muffins when taken from the oven drizzle with war honey and sprinkle with extra muesli. Turn out onto a wire rack to cool. Serve warm with butter.
