Old-fashioned date loaf

 



Preparation Time: 15 Minutes

Cook Time: 50 - 55 minutes

Serves: Makes 1 loaf

A moist bread loaf jam-packed with delicious dates.

Ingredients

250g pitted dates, finely chopped

5ml bicarbonate of soda

250ml boiling water

125g butter or margarine, softened

200ml (160 g) castor sugar

5ml vanilla essence

500ml (280 g) Snowflake white bread or cake flour

10ml baking powder

1ml salt

5ml ground mixed spice (optional)

1  extra-large egg

Method

  • Place dates in a bowl. Dissolve bicarbonate of soda in boiling water and pour over dates. Set aside.
  • Cream butter and sugar together. Add egg, beating well until light and creamy. Add essence.
  • Sift flour, baking powder, salt and mixed spice together. Add, alternately with dates and water, to egg mixture. Spoon mixture into a lined and greased 22.5 cm loaf pan.
  • Bake in a preheated oven at 160 °C for 50 - 55 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool.

Very moist but would bake it next time at 180 degrees
