Orange sauce

 



Preparation Time: 3 Minutes

Cook Time: 5 Minutes

Serves: Serves 2-4

Ever needed a little something extra to top off your pancakes or waffles? Look no further.

Ingredients

125ml (100 g) sugar

10ml grated orange rind

200ml fresh orange juice

100g butter or margarine

15ml cornflour

30ml brandy

Method

  • Heat sugar, orange rind, juice and butter in a small, heavy-based saucepan and stir until sugar has dissolved. Add some of the heated mixture to cornflour and mix well. Pour back into saucepan. Bring to the boil, whisking constantly, until smooth and thickened.
  • Heat brandy in a small, heavy-based saucepan (do not boil), pour over sauce, ignite and leave until flames subside. Pour over pancakes.
