Palmiers (Pigs ears)

 



Preparation Time: 20 Minutes

Cook Time: 7 minutes

Serves: Makes about 40

These simple puffed up and golden pastries will be a must at every party.

Ingredients

1  quantity (about 650 g) flaky pastry OR quantity (600 g) puff pastry

80ml (65 g) sugar

10ml ground cinnamon

60ml (25 g) ground almonds

Extra sugar for sprinkling

Method

  • Roll out pastry on a lightly floured surface to a rectangular shape of about 20 x 30 cm.
  • Mix sugar, cinnamon and almonds together. Sprinkle half the sugar mixture over pastry.
  • Fold both long ends to the middle. Sprinkle with remaining sugar. Fold in half to the middle again. Cover with plastic wrap and refrigerate for about 1 hour.
  • Cut the flat roll into 5 mm-thick slices. Place onto greased baking trays and sprinkle with extra sugar.
  • Bake in a preheated oven at 200 °C for about 7 minutes per side, or until golden brown. Turn out onto wire racks to cool. Dip one side in melted chocolate, if preferred.
