Delicious choc mint cupcakes topped with traditional peppermint tart cream and chocolate.

Ingredients

1  Snowflake Easymix Chocomint Muffin

500ml Fresh cream

1  Mint caramel tin

400g Choc mint slab

Method

  • Prepare the Snowflake Easymix Chocomint Muffin mix according to the packaging
  • Bake for 25 minutes
  • Beat cream until small peaks form
  • Whisk caramel till smooth
  • Crush 1 packet chocolate slab
  • Add cream, caramel and chocolate together and mix
  • Spoon on top of muffins once cooled
  • Top with remaining choc mint slab
