Perfect chocolate mud cake

 



Preparation Time: 15 minutes

Cook Time: 1 hour 20 minutes

Serves: Makes 2 large cake

Ingredients

200g butter or margarine

200g dark chocolate, broken into smaller pieces

30ml instant coffee granules

150ml water

500ml (420 g) castor sugar

200ml (110 g) Snowflake cake flour

200ml (110 g) Snowflake self-raising flour

3ml bicarbonate of soda

60ml (25 g) cocoa power

125ml buttermilk

2  extra-large eggs

Chocolate Ganache

300g dark chocolate, coarsely chopped

200ml fresh cream

Method

  • Place butter, chocolate, coffee, water and sugar in a large, heavy-based saucepan. Melt together over low heat until sugar is dissolved and butter and chocolate are melted. Remove from heat and allow to cool for about 15 minutes.
  • Sift cake flour, self-raising flour, bicarbonate of soda and cocoa powder together. Add the cooled chocolate mixture and beat gently.
  • Whisk eggs and buttermilk together, add to chocolate mixture and mix gently. Pour mixture into a lined and greased 23 cm loose-bottom springform cake pan.
  • Bake in a preheated oven at 160 °C for about 1 hour and 20 minutes. Cool slightly in pan before turning out onto a wire rack to cool completely.
  • Ganache: Combine chocolate and cream in a small, heavy-based saucepan. Stir over low heat until melted and smooth. Set aside and allow to cool to room temperature. Spread ganache over the cooled cake. Decorate with fresh berries, chocolate curls, or truffles.
