Pineapple custard filling

Serves: Serves 2-4

A different way to have your pancakes in the morning.

Ingredients

500ml milk

30ml sugar

50ml (25 g) custard powder

30ml butter or margarine

5ml vanilla essence

440g can pineapple pieces, drained and cut smaller

Method

  • Heat milk and sugar in a small, heavy-based saucepan. Add some of the heated milk to custard powder and mix well. Pour back into saucepan. Bring to the boil, whisking constantly, until smooth and thickened. Remove from heat.
  • Stir in butter and essence. Fold in pineapple pieces. Fill pancakes with custard mixture.
