Pineapple filling

 



Preparation Time: 3 Minutes

Cook Time: 5 Minutes

Serves: Fills 1 Flan

A tropical take for a flan recipe.

Ingredients

15ml butter or margarine

125ml (100 g) sugar

30ml cornflour or custard powder

250ml crushed pineapple

2ml vanilla essence

125ml fresh cream whipped

1  extra-large egg yolk, lightly beaten

Method

  • Combine butter, sugar, egg yolk, cornflour and crushed pineapple in a small, heavy-based saucepan. Boil for a few minutes until thickened. Remove from heat and add essence. Leave to cool. Stir in whipped cream.
  • Spoon into a flan and refrigerate until set.
