Serves: Makes about 500 g

Ideal for small pies and milk tarts.

Ingredients

375ml (210 g) Snowflake cake flour

1ml salt

200g cold butter

80ml ice-cold water

Method

  • Sift flour and salt together.
  • Divide butter into three equal portions. Rub one portion in with fingertips until mixture resembles fine breadcrumbs.
  • Add water, cut in with a knife and knead lightly to a firm pastry.
  • Roll out pastry on a lightly floured surface into a rectangular shape of 26 x 32 cm. Grate another portion of butter over pastry. Fold to close and roll out again. Grate remaining portion of butter over pastry and fold closed again. Cover with plastic wrap and refrigerate for at least 1 hour.
  • Roll out pastry on a lightly floured surface to a thickness of about 3 mm. Line a greased baking dish as required.
  • Bake in a preheated oven at 220 °C for 15 - 20 minutes, or until golden brown.
