Ingredients

560g Snowflake white bread flour

7ml salt

45ml castor sugar

10g (1 sachet) instant dry yeast

30ml cooking oil

300ml lukewarm water

250ml (150 g) seedless raisins

Sugar glaze

15ml castor sugar

12ml warm water

Method

  • Sift flour and salt together. Add sugar, mix and add yeast.
  • Add oil and enough lukewarm water to mix to a soft dough. Turn out onto a lightly floured surface and knead for 5 - 10 minutes, or until dough is smooth and elastic. Place dough in a large, lightly oiled bowl, cover and leave to rise in a warm place for about 20 minutes, or until doubled in size.
  • Knock down dough on a lightly floured surface, add raisins and knead until smooth. Shape into a load and place into a greased 22.5 cm loaf pan.
  • Cover and leave to rise in a warm place for about 10 minutes, or until doubled in size. Bake in a preheated oven at 180 °C for 35 - 40 minutes, until golden brown.
  • Glaze: Combine sugar and water and stir until sugar has melted. Brush over hot bread.

Easy Raisin Loaf

The instructions are easy to understand and the dough is nice and smooth and elastic once you finish with the kneading. I baked the loaf in a slightly smaller loaf pan than the recipe but the loaf was Big, rounded and scrumptious. Would definitely recommend this recipe.
