Red Velvet Sandwich Cookies

Cook Time: 12 minutes

Serves: 24 cookies

Ingredients

1  Snowflake Red Velvet Cupcake Mix

2  Extra-large eggs

80ml Cooking oil

Butter icing

300g Velvet icing mix

150g Butter or baking margarine

30ml Milk

Method

  • Preheat oven to 180 degrees
  • Place the cupcake mix into a mixing bowl, add the lightly beaten eggs and oil and mix until just combined.
  • Line two baking sheets with parchment paper and scoop two tablespoon sized balls of cookie dough, making sure you have spaces in between them.
  • Bake for 10-12 minutes. Remove from the oven and allow the cookies to cool.
  • For the icing: Beat softened butter or margarine with an electric mixer for 1 minute on high speed until creamy.
  • Add icing mix to creamed butter or margarine and beat mixture on slow until it resembles breadcrumbs.
  • Add milk and beat plus/minus 2 minutes on high speed or until creamy.
  • Use the icing to sandwich 2 cookies together.
