Rich shortcrust pastry

 



Preparation Time: 30 minutes

Cook Time: 20 - 25 minutes

Serves: Makes about 600 g

This pastry is used for sweet and savoury dishes such as pastries, pies, tarts, tartlets or flans. When used for savoury dishes, omit the sugar.

Ingredients

500ml (280 g) Snowflake cake flour

2ml salt

200g cold butter

15ml castor sugar (optional)

20ml ice-cold water

5ml fresh lemon juice

1  extra-large egg

Method

  • Sift flour and salt together.
  • Cut butter into small pieces and rub into flour with fingertips until mixture resembles fine breadcrumbs. Add sugar.
  • Whisk egg yolk, water and lemon juice together. Add to dry ingredients and cut in with a knife. Knead lightly to a firm pastry.
  • Cover with plastic wrap and refrigerate for at least 30 minutes. Roll out pastry on a lightly floured surface to a thickness of 3mm. line a greased baking dish as required.
  • Use as instructed in chosen recipe. The pastry is usually baked in a preheated oven at 200 °C for 20 - 25 minutes, or until golden brown.
