Royal icing

Serves: Makes about 500g

The pure white icing provides a perfectly smooth and hard surface, ideal for icing special cakes and also to pipe decorations, such as flowers, borders or lettering.

Ingredients

750ml (400 g) icing sugar, sifted

5ml fresh lemon juice

2  extra-large egg whites

Method

  • Whisk egg whites until foamy. Gradually whisk in about half the icing sugar, a spoonful at a time.
  • Whisk in lemon juice and gradually add remaining icing sugar. Whisk to soft peak stage.
  • Cover icing until ready to use to prevent it from drying out. Use a palette knife to spread smoothly and keep some icing aside for piping or making decorations.
