Soda water pastry

 



Preparation Time: 30 minutes

Cook Time: 20 minutes

Serves: Makes about 450 g

This versatile pastry is delicate and is used for sweet and savoury dishes, as well as pastries such as sausage rolls and cream horns.

Ingredients

500ml (280 g) Snowflake cake flour

3ml salt

150g cold butter

60ml ice-cold soda water

5ml fresh lemon juice or brandy

Method

  • Sift flour and salt together. Cut butter into small pieces and rub into four with fingertips until mixture resembles fine breadcrumbs.
  • Combine soda water and lemon juice. Add to dry ingredients and but in with a knife. Knead lightly to a firm pastry.
  • Cover with plastic wrap and refrigerate for at least 30 minutes. Roll out pastry on a lightly floured surface to a thickness of about 3 mm.
  • Use as instructed in chosen recipe. The pastry is usually baked in a preheated oven at 200 °C for about 20 minutes, or until golden brown.
