Sour cream pastry

 



Preparation Time: 30 minutes

Cook Time: 20 - 25 minutes

Serves: Makes about 500 g

Use for savoury pastries and pies.

Ingredients

500ml (280 g) Snowflake cake flour

3ml salt

3ml cream of tartar

30ml cold butter

250ml sour cream

15ml water

Method

  • Sift flour, salt and cream of tartar together.
  • Rub in butter with fingertips until mixture resembles fine breadcrumbs. Add sour cream and water, cut in with a knife and knead lightly to a firm pastry. Cover with plastic wrap and refrigerate for at least 30 minutes.
  • Roll out pastry on a lightly floured surface to a thickness of about 3 mm.
  • Use as instructed in chosen recipe and bake in a preheated oven at 200 °C for 20 - 25 minutes, or until golden brown.
