Standard butter cake

 



Preparation Time: 15 Minutes

Cook Time: 30 - 35 minutes

Serves: Makes 1 two-layer cake

A classic and easy cake to make with your family.

Ingredients

125g butter or margarine, softened

250ml (210 g) castor sugar

5ml vanilla essence

500ml (280 g) Snowflake cake flour

10ml baking powder

1ml salt

125ml milk

80ml water

5ml cream of tartar

1  quantity butter icing

4  extra-large eggs, separated

Method

  • Cream butter and sugar together.
  • Add egg yolks, one at a time, beating well after each addition until light and creamy. Add essence.
  • Sift flour, baking powder and salt together. Add, alternately with milk and water, to egg mixture. Mix well.
  • Beat egg whites until foamy, add cream of tartar and continue beating until soft peak stage. Gently fold egg whites into cake mixture, using a metal spoon. Spoon mixture into two greased 20 cm round cake pans.
  • Bake in a preheated oven at 180 °C for 30 - 35 minutes. Leave in pans for a few minutes before turning out onto a wire rack to cool completely.
  • Sandwich cake layers with half the icing. Use remaining icing to ice top of cake.
