Strawberry and cream cheese muffins

Preparation Time: 10 minutes

Cook Time: 20 - 25 minutes

Serves: Makes 10 standard or 6 large

A tasty treat for all occasions.

Ingredients

100g cream cheese

60ml (50 g) castor sugar

200g fresh strawberries, coarsely chopped

375ml (210 g) Snowflake cake flour

10ml Snowflake baking powder

1ml salt

125ml (100 g) sugar

80ml cooking oil

5ml vanilla essence

2  extra-large eggs

30ml Icing sugar for dusting

Method

  • Beat cream cheese with half the castor sugar. Set aside.
  • Place strawberries and remaining castor sugar in a small, heavy-based saucepan and heat for 2 minutes until strawberries start to soften. Remove from heat, mash lightly and set aside to cool.
  • Sift flour, baking powder and salt together. Add sugar.
  • Whisk eggs, oil and essence together. Add to dry ingredients and mix until just combined. Do not over-mix; mixture should still be lumpy.
  • Add cream cheese and strawberry mixture and lightly mix through. Spoon mixture into greased muffin pans, filling each two-thirds full.
  • Bake in a preheated oven at 180 °C for 20 - 25 minutes, until done and golden. Turn out onto a wire rack to cool. Serve warm or at room temperature, dusted with icing sugar.
