Sweet and sour pork

 



Preparation Time: 15 minutes

Cook Time: 35 - 45 minutes

Serves: Serves 4 - 6

Don't call the takeaway – cook your own sweet & sour pork using Snowflake's approved recipe.

Ingredients

700g pork, cut into 1.5 cm cubes

15ml soy sauce

1ml Salt and freshly ground black pepper to taste

750ml or more cooking oil for deep-frying

Batter

125ml (70g) Snowflake self-raising flour

125ml (60g) Snowflake corn flour

125ml water

1  extra-large egg

Sauce

30ml cooking oil

1  medium onion, coarsely chopped

1  medium green pepper, seeded and sliced (optional)

60ml sugar

45ml brown vinegar

30ml soy sauce

30ml sherry (optional)

1ml ground ginger

125ml water

440g can pineapples, drained and juice reserved

Method

  • Place pork cubes in a large bowl. Add soy sauce and seasoning, cover and leave to marinate for about 1 hour.
  • Batter:
  • Sift self-raising flour. Add cornflour, egg and water and whisk until batter is smooth, thick and lump free.
  • Leave batter to stand for about 15 minutes before using.
  • Sauce:
  • Heat oil in a large, heavy-based saucepan. Add onion and green pepper and sauté for a few minutes until soft. Add sugar, vinegar, soy sauce, sherry, ginger, water, cornflour and 125 ml of reserve pineapple juice. Cook sauce until it thickens, then add pineapple pieces and cook until heated through.
  • Heat oil in a small, heavy-based saucepan. Dip marinated pork cubes in batter and gently drop, in batches, into hot oil and deep-fry until golden brown. Remove from oil with a slotted spoon and drain on paper towel. Serve pork and sauce with noodles or rice.
  • For variations substitute pork with fish or chicken cubes.
