Sweetcorn cheese puffs

Preparation Time: 3 Minutes

Cook Time: 5 Minutes

Serves: Makes about 30

A cute and easy-to-eat snack that is perfect for a homemade party platter.

Ingredients

250g Snowflake Easymix flapjack

15ml cooking oil

160ml milk or water

410g can corn kernels, drained

125ml (50 G) grated mozzarella or cheddar cheese

1  extra-large egg

750ml Cooking oil for deep-frying

1ml Paprika for sprinkling

Method

  • Place premix into a mixing bowl. Lightly beat eggs, oil and milk together.
  • Add to premix and mix with whisk until batter is smooth, thick and lump free.
  • Add corn kernels and cheese and mix lightly.
  • Heat oil in a small, heavy-based saucepan. Gently drop, heaped teaspoonful of mixture into hot oil and deep-fry until golden brown.
  • Remove from oil and drain on paper towel. Sprinkle with peri-peri and serve immediately.
