Tagliatelle with creamy asparagus sauce

The perfect comfort food.

Ingredients

250g (½ quantity) tagliatelle pasta

45ml butter or olive oil

1  medium onion, coarsely chopped

1  clove garlic, crushed

5ml chopped fresh root ginger

2  (about 30 g) chorizo sausages, thinly sliced

125g fresh asparagus spears, cut into pieces or 420 g can asparagus salad cuts, drained

30ml chopped fresh mixed herbs or 10 ml dried

1  pinch salt and freshly ground black pepper to taste

250ml fresh cream

125ml or to taste Grated Parmesan cheese (optional)

Method

  • Bring a large, heavy-based saucepan of salted water to the boil. Add pasta and cook for 3 - 5 minutes. Drain and set aside.
  • Melt butter in a large heavy-based frying pan, add onion, garlic and ginger and saute for a few minutes until soft.
  • Add sausages, asparagus, herbs and seasoning and fry for a few minutes.
  • Add pasta and cream to sausage mixture. Simmer for a few minutes for sauce to reduce. Serve with Parmesan cheese.
