Vanilla Cupcakes

 



Preparation Time: 10 minutes

Cook Time: Plus/minus 15 minutes

Serves: Makes: 12 regular cupcakes

A versatile treat for all occasions that demand perfection – every time.

Ingredients

230g Snowflake Creations Vanilla Flavoured Cupcake Mix

1  extra-large egg

60ml cooking oil

100ml milk

Vanilla flavoured cupcake icing

250g vanilla flavoured cupcake icing

125g butter or baking margarine

25ml milk

Method

  • Preheat oven to 180 degree celsius
  • Beat egg, oil and milk and then add the cupcake mix. Beat batter with a whisk until smooth.
  • Place paper cups into cupcake tin. Spoon equal quantities of batter into paper cups.
  • Bake for plus/minus 15 minutes.
  • Allow to cool before icing.
  • Vanilla flavoured cupcake icing: Beat softened butter or margarine with an electric mixer for 1 minute on high speed until creamy. Add icing to creamed butter or margarine and beat mixture on slow until mixture resembles breadcrumbs. Add the milk and beat plus/minus 2 minutes on high speed or until creamy. Decorate cupcakes with icing and sprinkles.
  • For the frosting, add 225g butter to a large mixing bowl and beat until smooth
  • Add 2 cups icing sugar and mix until smooth and well combined
  • Add 1 1/2 teaspoons vanilla extract and 2 tablespoons milk and mx until combined
  • Add another 2 cups of icing sugar, or add until desired consistency is reached
