Vegetable coated in batter

 



Preparation Time: 3 Minutes

Cook Time: 20 - 25 Minutes

Serves: Serves 4 - 6

Delicious and satisfying

Ingredients

250g Snowflake Easymix pancake batter (375 ml)

10ml cooking oil

250ml water

1  extra-large egg

250g broccoli and cauliflower, most of stems removed

1  medium onion

1ml Salt and freshly ground black pepper to taste

750ml +- Cooking oil for deep-frying

Method

  • Place premix into a mixing bowl. Lightly beat egg, oil, water and seasoning together. Add to premix and mix with a whisk until batter is smooth, thick and lump free.
  • Break the broccoli and cauliflower into bite-size florets and set aside. Slice the onion into thick rings.
  • Heat oil in a small, heavy-based saucepan. Dip the vegetables into the batter and deep-fry in hot oil for a few minutes until golden brown and crisp. Remove from oil and drain on paper towel. Serve immediately with sweet chilli sauce.
