Wholesome bran rusks

 



Preparation Time: 20-25 Minutes

Cook Time: 45 minutes

Serves: Makes about 70

Scrumptious dipped in a cup of tea.

Ingredients

800ml boiling water

375ml (300 g) sugar

350g margarine (preferably not butter)

1kg  Snowflake self-raising flour (7 cups)

15ml baking powder

10ml salt

5ml cream of tartar

500ml (90 g) Snowflake digestive bran

3  extra-large eggs, beaten

Method

  • Combine boiling water, sugar and margarine in a large mixing bowl. Stir until margarine has melted. Allow mixture to cool. Add eggs and mix well.
  • Sift flour, baking powder, salt and cream of tartar together. Add digestive bran. Add egg mixture to dry ingredients and stir well until combined (mixture will be runny).
  • Pour into three greased 22.5 cm loaf pans. Bake in a preheated oven at 180 °C for about 45 minutes or until done.
  • Leave in pans for a few minutes to cool. Turn out onto wire racks to cool completely. Cut each loaf into eight thick slices and then divide each slice into three again (use an electric carving knife if possible, to prevent breaking).
  • Dry out in a cool oven at about 70 °C for 6 - 8 hours, or overnight. Store in an airtight container.
